Spinach Feta pie

Ingredients

  • 10 oz Good Feta, crumbed
  • 2-10oz Boxes of Frozen Chopped Spinach, thawed
  • 1 Medium Yellow Onion, finely chopped
  • 2 Tbsp of Olive Oil
  • 1 Small Bunch of Scallions
  • 1/2 cup of Chopped Parsley
  • 1/2 cup of Chopped Fresh Dill
  • 4 Eggs
  • 1 lb Pack of Filo Dough (you need about 3/4 so about 1 1/5 packs from the 1lb box)
  • Olive oil
  • Black Pepper

Preparation

    1) Preheat your oven to 375 degrees, grease a 9" round baking pan (non-stick) with some olive oil and set aside.

    2) In a small skillet add the olive oil and preheat over medium heat, once it starts to shimmer, add the onions along with a small pinch of salt and saute until soft and translucent, about 5 to 7 minutes, remove from the heat and set aside to cool.

    3) In a large bowl, mix together the feta, spinach, herbs and scallions, eggs, cooked onions and a few grindings of black pepper, make sure to mix it well and set aside while you prep your filo.

    4) Start layering the filo in your pan, overlapping the pan with some of the sheets, drizzle olive oil in between every 4 sheets of filo, then fill with the filling, fold the overlapping pieces over the sides, drizzle with olive oil and bake for about 40-45 minutes or until deeply golden brown.

    5) Allow the spinach pie to cool for about an hour before cutting into slices and serving.
